  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup white miso paste
  • 2 tablespoons fruit vinegar (like apple cider vinegar)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss eggplant cubes with olive oil, salt, and pepper on a baking sheet until evenly coated.
  3. Roast in the oven for 20-25 minutes until tender and lightly browned, flipping halfway through.
  4. While roasting, whisk together miso paste, fruit vinegar, soy sauce, honey, ginger, and garlic in a mixing bowl until smooth.
