  • 1 lb ground beef or lamb
  • 1 small onion, grated
  • 3 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a large mixing bowl, combine ground meat, grated onion, minced garlic, herbs, and spices until well mixed.
  3. Divide the mixture into 6–8 portions and mold onto skewers into oval shapes.
  4. Preheat grill or grill pan over medium-high heat and lightly oil it to prevent sticking.
  5. Grill kebabs for about 10–12 minutes, turning occasionally until fully cooked through.
  6. Serve hot with rice or flatbread alongside tahini or yogurt sauce.
