  • ½ red onion
  • ¼ cup kalamata olives
  • ⅓ cup feta cheese (optional)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil for vinaigrette
  • 2 tbsp lemon juice (fresh) for vinaigrette
  • 1 tsp honey (omit for Whole30) for vinaigrette
  • 1 garlic clove (minced) for vinaigrette
  • ½ tsp dried oregano for vinaigrette

Instructions

  1. Marinate the steak in olive oil, garlic, lemon juice, herbs, salt, and pepper for at least 30 minutes.
  2. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper; chill until ready to serve.
  3. Sear the marinated steak in a skillet over medium-high heat for about 4–5 minutes per side until desired doneness; let it rest before slicing.
