  • 1/2 cup roma tomatoes, diced
  • 1/2 cup English cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup canned chickpeas, rinsed
  • 1/2 cup kalamata olives, sliced
  • 2 tablespoons crumbled feta cheese (or tofu for vegan option)
  • Fresh herbs (parsley, mint, basil)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red apple vinegar
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons extra-virgin olive oil

Instructions

  1. In a medium saucepan over medium heat, bring 1 cup of water and 1/2 teaspoon salt to a boil. Stir in olive oil and add couscous. Remove from heat, cover, and let sit for about 5 minutes until fluffy.
  2. While the couscous is resting, dice the tomatoes and cucumber; chop the bell pepper and onion.
  3. In a large mixing bowl, combine fluffed couscous with chickpeas, olives, vegetables, herbs, lemon peel, lemon juice, and vinegar.
  4. In a small bowl, whisk together additional olive oil with salt and pepper; pour over the salad mixture and toss gently.
  5. Serve immediately or refrigerate for up to an hour to enhance flavors.
