  • 2 teaspoons baking powder

  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup canola oil
  • ½ cup buttermilk
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup shredded zucchini

Instructions

  1. Preheat oven to 350°F (175°C). Grease mini loaf pans or a large loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, mix sugar, eggs, oil, buttermilk, lemon zest, and lemon juice until smooth.
  4. Fold in shredded zucchini into the wet mixture.
  5. Gradually combine dry ingredients with wet ingredients until just mixed; do not overmix.
  6. Pour batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  7. Cool before glazing with a mixture of powdered sugar and lemon juice.
