Instructions

  1. Rinse the rice under cold water using a fine mesh strainer until the water runs clear.
  2. In a medium pot, melt the butter over medium heat. Add the rinsed rice and salt, cooking for about 3 minutes while stirring occasionally.
  3. Pour in the water along with the lemon zest and lemon juice. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
  4. Remove from heat and let sit covered for an additional 5-10 minutes.
  5. Fluff the rice with a fork, sprinkle turmeric if desired, and garnish with chopped parsley before serving.
