  • 2 lb beef chuck stew meat
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 lb celery root, cubed
  • 6 cups beef bone broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves

Instructions

  1. Season the beef with salt and pepper. Heat 1 tbsp of olive oil in a Dutch oven over medium heat. Sear the beef until browned; set aside.
  2. In the same pot, add another tablespoon of olive oil and sauté onions and carrots for about 10 minutes until softened.
  3. Stir in garlic and Italian seasoning; cook for an additional minute until fragrant.
  4. Return the seared beef to the pot, add broth, diced tomatoes, and bay leaves. Bring to a boil, then reduce heat and simmer for 45–60 minutes.
  5. Add cubed celery root; bring back to a boil and simmer for another 15 minutes until tender.
  6. Remove bay leaves and adjust seasoning before serving.
