  • 12 ounces sweet potato glass noodles
  • 16 ounces beef (cut into strips)
  • 2 large eggs (beaten)
  • 1 large carrot (peeled and julienned)
  • 1 medium yellow onion (thinly sliced)
  • 3 mushrooms (any variety, thinly sliced)
  • 2 cups baby spinach
  • 2 stalks green onion (cut into pieces)
  • Sauce: soy sauce, honey, brown sugar, sesame oil

Instructions

  1. Prepare the sauce by mixing soy sauce, honey, brown sugar, and sesame oil in a bowl.
  2. Boil sweet potato noodles in water for about 10-15 minutes until cooked. Drain and rinse with cold water.
  3. In a nonstick pan, cook beaten eggs to create an egg crepe. Remove from the pan and cut into strips.
  4. In the same pan, cook beef strips until browned; remove from heat.
  5. Sauté carrots, onions, mushrooms, and spinach in succession until tender.
  6. Combine the prepared sauce with cooked noodles in a large stir-fry pan over low heat. Mix well.
  7. Add beef strips, sautéed vegetables, and egg strips to the noodle mixture; toss gently to combine.
  8. Serve warm or chilled with sesame seeds as garnish.
