  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 5 carrots, peeled and cut into chunks
  • 1 cup frozen peas
  • Fresh herbs: rosemary, thyme
  • Mashed potatoes for serving

Instructions

  1. In a Dutch oven over medium-high heat, add olive oil. Season beef or lamb with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme in a ziplock bag. Shake well.
  2. Sear the meat in the hot oil until browned on all sides.
  3. Gradually stir in beef broth while preventing lumps. Add carrots and bay leaves; bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 45 minutes.
  5. Stir in frozen peas five minutes before serving; remove bay leaves.
  6. Serve alongside creamy mashed potatoes.
