  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1 cup canned chickpeas
  • 1 teaspoon paprika
  • 4 oz halloumi cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss cauliflower with olive oil, honey, curry powder, salt, and pepper.
  3. Spread seasoned cauliflower on a baking sheet and roast for about 20 minutes until golden brown.
  4. While roasting, toss chickpeas with paprika and olive oil; spread on another baking sheet and roast until crunchy.
  5. Heat grill pan over medium heat; grill halloumi slices until golden brown on both sides.
  6. Assemble by placing roasted cauliflower on a plate, topping with grilled halloumi and crunchy chickpeas.
