  • 1/4 cup warm water (60 ml)
  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. In a small bowl, combine rolled oats with warm milk; let sit for 10 minutes.
  2. In another bowl, dissolve yeast in warm water with honey; let sit until bubbly (5-10 minutes).
  3. Mix softened oats, melted butter, and additional honey into the yeast mixture.
  4. Gradually add flour, cinnamon, and salt; stir until shaggy dough forms.
  5. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  6. Place in an oiled bowl, cover with a damp cloth, and let rise until doubled (1-1.5 hours).
  7. Punch down the dough; shape into a log and transfer to a greased loaf pan. Let rise again for about 30-40 minutes.
  8. Preheat oven to 375°F (190°C) and bake for 30-35 minutes until golden brown.
