  • 12 tablespoons cold unsalted butter
  • ½ cup cold heavy cream
  • 2 large eggs
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the cold heavy cream, one egg, and one egg yolk (reserve the egg white).
  3. In a food processor, pulse together flour, sugar, baking powder, chai spice blend, and salt. Add cold butter and pulse until crumbly.
  4. Gradually incorporate the chilled cream mixture into the dry ingredients until a wet dough forms.
  5. Shape the dough into a disc wrapped in plastic wrap; freeze for 30 minutes.
  6. Roll out to desired thickness and cut into shapes.
  7. Brush with reserved egg white and bake for 20-22 minutes until golden brown.
  8. Prepare the glaze by combining powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
