  • 4 chicken drumsticks
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a large bowl, toss chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper until well coated.
  3. In another bowl, combine cubed potatoes, sliced carrots, bell pepper, and onion. Drizzle with olive oil and season with paprika, salt, and pepper; toss to coat.
  4. Spread the vegetables in a baking dish and place the seasoned chicken on top.
  5. Roast in the preheated oven for 50-55 minutes until the chicken is golden brown and cooked through (internal temperature should reach 75C or 165F) and vegetables are tender.
  6. Garnish with fresh parsley before serving.
