  • 2 large Egg Whites (Room Temperature)
  • 1/4 tsp Cream of Tartar
  • 1/2 cup White Sugar
  • 1 stick Unsalted Butter (softened)
  • 2 cups Confectioner’s Sugar
  • 2 tbsp Milk
  • Purple Gel Food Coloring
  • Black Decorating Frosting

Instructions

  1. Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. Pour the egg whites into a large bowl and beat with an electric mixer, adding the cream of tartar.
  3. Gradually add sugar while increasing speed until semi-stiff peaks form.
  4. Pipe ghost shapes onto the lined baking sheet and bake for 2 hours. Turn off heat and let cool inside the oven for an additional 30 minutes.
  5. In a separate bowl, mix softened butter, confectioners’ sugar, and milk until smooth. Tint with purple gel food coloring.
  6. Frost each cupcake generously with purple buttercream and top with the cooled meringue ghosts decorated with black frosting.
