  • Avocado, diced
  • Cherry tomatoes, halved
  • Red onion, finely chopped
  • Fresh cilantro or parsley
  • Lime juice
  • Greek yogurt
  • Garlic (minced)
  • Fresh dill or parsley

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare sweet potato wedges by tossing them in olive oil, smoked paprika, salt, and pepper. Roast on a baking sheet for 25-30 minutes until golden.
  2. Season chicken with olive oil, garlic powder, paprika, lemon juice, salt, and pepper. Grill over medium-high heat for 6-7 minutes per side until fully cooked.
  3. For the avocado salsa, mix diced avocado, halved cherry tomatoes, chopped red onion, herbs, lime juice, salt, and pepper in a bowl.
