  • 2 garlic cloves, minced
  • 2¼ cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add the chopped onion and cook until translucent (3–4 minutes).
  2. Stir in minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the rice and toast for 1–2 minutes.
  4. Pour in the broth, add oregano, salt, and pepper. Stir well and bring to a boil.
  5. Reduce heat to low; cover and simmer for 15–18 minutes until rice is tender.
  6. Remove from heat; stir in lemon juice, zest, parsley, and optional dill if desired.
  7. Fluff with a fork before serving warm.
