  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • Fresh dill & mint (optional)
  • 1 cup Greek yogurt
  • 1 cucumber, grated & squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • Juice of lemon
  • Salt & pepper to taste

Instructions

  1. In a bowl, mix olive oil, minced garlic, oregano, lemon juice, salt, and pepper. Coat chicken breasts and marinate for at least 10 minutes.
  2. Preheat grill or skillet over medium-high heat. Cook marinated chicken for 4–5 minutes on each side until golden brown. Let rest before slicing.
  3. In another bowl, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper. Mix well.
  4. Layer chopped romaine in bowls and top with tomatoes, cucumber slices, red onion, cubed feta cheese, and sliced grilled chicken. Add tzatziki on top.
  5. Optionally garnish with additional herbs or lemon wedges.
