  • 2 lbs beef chuck, cubed
  • 3 tbsp olive oil
  • 1 onion, diced
  • 2 ribs celery, diced
  • 4 carrots, diced
  • 3 garlic cloves, minced
  • ¾ cup dry red apple vinegar
  • 6 cups low-sodium beef broth
  • 1 cup pearled barley
  • Fresh thyme, parsley, salt, and pepper

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sear the cubed beef until browned on all sides; remove and set aside.
  2. In the same pot, add more olive oil if needed. Sauté onion, celery, and carrots for about 5 minutes until softened. Add minced garlic and cook for another minute.
  3. Deglaze the pot with red apple vinegar, scraping up any browned bits. Allow to reduce by half.
  4. Return the beef to the pot along with beef broth and thyme. Bring to a boil, then reduce heat and simmer uncovered for 45 minutes.
  5. Stir in pearled barley and continue simmering for an additional 45–60 minutes until barley is tender.
  6. Adjust seasoning with salt and pepper before serving warm.
