  • 3 shallots (diced)
  • 1 bunch green onions (chopped, green and white divided)
  • 4 cloves garlic (minced)
  • 2 tablespoons ginger (fresh, minced)
  • 5.5 cups low sodium chicken broth (or vegetable broth for vegan)
  • 2 whole star anise
  • 2 tablespoons soy sauce (or Tamari for a Gluten Free option)
  • 10 oz crimini mushrooms (sliced)
  • 6 oz rice noodles
  • 1.5 heads bok choy (roughly chopped)
  • sesame seeds (for topping)
  • red pepper flakes (for topping)

Instructions

  1. Heat 1-2 tablespoons olive oil in a medium-sized stockpot over medium heat. Add diced shallots and cook for 4-5 minutes until they are translucent.
  2. Chop green onions by dividing the white part from the green part. Set aside the green tops for later. Add the white part of green onions, minced garlic, and ginger to the pot. Cook for 1-2 minutes until fragrant.
  3. Pour in the chicken or vegetable broth into the pot. Stir in star anise and soy sauce. Cover and let it simmer for 10 minutes.
  4. After simmering, remove the lid from the pot. Carefully take out each star anise; discard them.
  5. Add sliced mushrooms, uncooked rice noodles, and chopped bok choy to the pot. Simmer for another 5-8 minutes until noodles are tender.
  6. Divide soup into bowls. Garnish with sesame seeds, green parts of green onions, and red pepper flakes if desired.
