  • 1 cup grated Parmesan cheese
  • 12 oz twisted pasta (gemelli or fusilli)
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan for sauce
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp crushed red pepper flakes, optional
  • Fresh parsley or dried herbs, for garnish

Instructions

  1. Boil a large pot of salted water and cook the twisted pasta until al dente. Drain and set aside.
  2. Season chicken strips with Cajun seasoning and press grated Parmesan onto them.
  3. In a skillet, heat olive oil and 2 tablespoons of butter. Sear the chicken until golden brown, then add minced garlic towards the end.
  4. In the same skillet, melt remaining butter and sauté garlic before adding cream and broth to simmer.
  5. Incorporate softened cream cheese followed by mozzarella, cheddar, and Parmesan until thickened.
  6. Toss cooked pasta into the sauce until well-coated. Let it simmer for about 12 minutes.
  7. Serve topped with garlic Parmesan chicken strips and garnish as desired.
