  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 12 oz rotini pasta

Instructions

  1. Cook the rotini in salted boiling water until al dente, about 10 minutes. Drain and set aside.
  2. Season chicken strips with Cajun seasoning, smoked paprika, salt, and pepper; coat with grated Parmesan.
  3. In a skillet over medium-high heat, heat olive oil and 2 tbsp butter; sear the chicken for 5-7 minutes until cooked through.
  4. Stir in remaining butter and half of the minced garlic during the last minute of cooking; remove from skillet.
  5. In the same skillet, sauté remaining garlic for 30 seconds; then add heavy cream and chicken broth—bring to a low simmer.
  6. Whisk in cream cheese until smooth; then add mozzarella, cheddar, and Parmesan until thickened into a creamy sauce.
  7. Season sauce with Italian seasoning, basil, red pepper flakes (if desired), salt, and pepper; simmer for an additional 2-3 minutes.
  8. Add cooked rotini to the skillet; toss gently until coated in sauce. Allow to sit on low heat for one minute.
  9. Serve topped with garlic Parmesan chicken or mixed together; garnish with chopped parsley.
