  • 3.4 lb bone-in lamb shoulder, trimmed
  • 6 cloves garlic, smashed
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Fresh rosemary
  • Fresh thyme
  • 1 cup chicken broth
  • Salt & freshly ground black pepper

Instructions

  1. Preheat oven to 325°F (163°C). Season the lamb shoulder generously with salt and pepper.
  2. In a bowl, mix smashed garlic, Dijon mustard, honey, olive oil, rosemary, thyme, and bay leaf to create the marinade.
  3. Rub the marinade over the lamb shoulder and marinate for at least 1 hour or overnight for better flavor.
  4. Place the marinated lamb in a roasting pan with chicken broth. Cover with foil and roast for about 3 hours until tender.
  5. Remove foil in the last 30 minutes to allow caramelization. Check internal temperature; it should reach at least 145°F (63°C).
  6. Let rest for 15 minutes before carving and serving.
