  • 1 salmon fillet
  • 1 tbsp butter
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • Salt & pepper to taste
  • 2 medium potatoes, peeled & diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup baby carrots
  • 1 tbsp butter
  • 1 tsp honey or maple syrup
  • Pinch of chili flakes (optional)
  • 1 cup broccoli florets
  • Pinch of salt

Instructions

  1. Preheat your oven to 400F (200C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper. Roast on a baking sheet for 25-30 minutes until golden.
  2. In a skillet over medium heat, melt butter and add smashed garlic. Season salmon with paprika, salt, and pepper; cook skin-side down for 4-5 minutes per side until cooked through.
  3. Steam baby carrots for about 5 minutes until tender. In a separate pan, melt butter and stir in honey (and chili flakes if desired). Toss the steamed carrots in this glaze.
  4. Use a steamer basket to steam broccoli florets for 3-4 minutes until bright green and tender-crisp.
  5. Plate salmon alongside roasted potatoes, glazed carrots, and steamed broccoli.
