  • 1 large egg (separated)

  • Fresh sage

Instructions

  2. Boil halved garlic cloves in a saucepan for 3-4 minutes; drain and mash.
  3. Add mashed garlic to the simmering stock; let it cook for 10 minutes.
  4. For mayonnaise, blend egg yolk, mustard, salt, and oil until emulsified.
  5. Temper mayonnaise with hot soup, then stir into the pot without boiling.
  6. Serve hot with croutons and a drizzle of olive oil.
