  • 3 medium zucchinis
  • 1 cup crumbled feta cheese
  • ½ cup strained Greek yogurt
  • ½ cup grated Gruyere cheese
  • 1 medium spring onion
  • Lemon zest from ½ lemon
  • Garlic powder
  • Fresh parsley
  • Olive oil
  • Dried oregano

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Wash and cut the zucchinis in half lengthwise, scooping out some flesh.
  3. In a mixing bowl, combine the feta, Greek yogurt, Gruyere, lemon zest, garlic powder, chopped parsley, olive oil, oregano, and finely chopped spring onion until well mixed.
  4. Stuff each zucchini half generously with the filling.
