  • 7 large bell peppers
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes
  • 1 cup shredded cheddar jack cheese
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 23 garlic cloves (minced)
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Kosher salt and pepper (to taste)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare the bell peppers by placing them cut side up in a baking dish.
  2. In a large skillet over medium heat, sauté diced onion in olive oil until softened; add minced garlic and cook briefly.
  3. Add ground beef to the skillet; cook until browned. Stir in cooked rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper; cook until slightly reduced.
  4. Fill each pepper with the beef mixture and bake for 10-12 minutes until tender.
