  • ½ yellow onion (chopped)
  • 4 garlic cloves (minced)
  • 1 large carrot (cut into chunks)
  • 2 Yukon Gold potatoes (diced)
  • 2 cups beef broth
  • ¼ cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 2 teaspoons fresh thyme leaves (for garnish)

Instructions

  1. Preheat the oven to 325°F.
  2. Season beef chunks with salt and pepper, then coat with flour.
  3. Heat olive oil in a Dutch oven over medium heat and brown the beef in batches.
  4. Sauté onion, garlic, and carrot in the same pot until lightly browned.
  5. Add potatoes, broth, tomato paste, Worcestershire sauce, bay leaf, and thyme; stir well.
  6. Bring to a simmer, return beef to the pot, cover, and transfer to the oven.
  7. Cook for about 2–2.5 hours or until the beef is fork-tender.
