This creamy pasta salad combines tender macaroni with hard-boiled eggs, all dressed in a light and flavorful mixture of Greek yogurt and mayonnaise.

  • 8 oz macaroni pasta
  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, diced
  • 2 celery ribs, chopped
  • Fresh chives, for garnish
  • Paprika, for garnish
  • Sea salt, to taste

Instructions

  1. Cook the macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water; set aside.
  2. Halve the hard-boiled eggs, remove yolks, and place them in a bowl. Chop egg whites and add to the macaroni.
  3. Mash the yolks until smooth; mix in yogurt, mayonnaise, and mustard until well blended.
  4. Combine the dressing with macaroni, diced onion, and celery; stir gently to combine.
  5. Garnish with chives, paprika, and sea salt. Chill for at least one hour before serving.
