  • 45 boneless, skinless chicken thighs
  • 3 cups romaine lettuce, chopped
  • ½ cup Parmesan cheese, shaved
  • 1 large egg (for marinade)
  • ½ cup olive oil (for dressing)

  • 2 tbsp flour
  • 3 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic, minced
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh lemon juice
  • 3 anchovy fillets
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp Worcestershire sauce
  • ½ tsp black pepper
  • Salt, to taste
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter
  • Pinch of salt
  • Canola oil, for frying

Instructions

  1. Prepare the marinade by mixing the chicken thighs with egg, flour, cornstarch, soy sauce, sesame oil, garlic, onion powder, salt, and pepper. Let marinate for at least 20 minutes.
  2. In a pan over medium-low heat, toast panko breadcrumbs until golden brown.
  3. Blend all dressing ingredients until smooth.
  4. Heat canola oil to 350°F (175°C) and fry marinated chicken until golden brown (8-10 minutes). Drain on a wire rack.
  5. Assemble the sandwich by mixing romaine lettuce with Caesar dressing and toasted panko. Spread extra dressing on toasted croissants and layer with crispy chicken and Caesar salad mixture.
