  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup sweet onion (diced)
  • 1 ½ tablespoons garlic (minced)
  • 1 cup heavy cream
  • ¾ cup freshly grated Romano cheese
  • Fresh herbs: basil, oregano, mint
  • 12 ounces your favorite dry pasta
  • Pinch red pepper flakes
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Cook 12 ounces of your favorite pasta according to package directions and reserve 1 cup of the pasta water.
  2. Shred the zucchini using a box grater or food processor and set aside.
  3. In a large skillet over medium-high heat, sauté diced onion in olive oil until translucent (about 3 minutes).
  4. Add red pepper flakes and minced garlic; cook for an additional minute.
  5. Stir in shredded zucchini and season with salt, black pepper, and half of the fresh herbs. Cover and simmer for 15 minutes.
  6. Uncover the skillet and stir in heavy cream along with the remaining herbs. Mix well.
  7. Finish by adding Romano cheese; adjust thickness with reserved pasta water if needed.
