  • 68 cups chicken broth
  • 6 oz pasta (small shells recommended)
  • 1 cup heavy whipping cream
  • 1/21 cup grated Parmesan cheese
  • 2 1/23 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken seasoned with Italian seasoning, salt, and pepper; cook until browned (4–5 minutes).
  2. Stir in the onions, carrots, celery, sundried tomatoes, and garlic; cook until translucent (3–4 minutes).
  3. Sprinkle flour over the mixture; stir well to combine.
  4. Gradually whisk in chicken broth while stirring to avoid lumps.
  5. Bring to a boil; add pasta and additional seasoning. Cover and reduce heat to simmer for 20 minutes.
  6. Stir in heavy cream, spinach, and Parmesan; simmer for another 5 minutes.
