Ingredients

  • 34 lbs ripe organic tomatoes
  • 2 garlic bulbs
  • 1/2 onion
  • 1 Tbsp extra virgin olive oil
  • 1.5 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsp organic tomato paste
  • sea salt
  • On Everything All-Purpose Blend
  • smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Arrange tomato wedges and halved garlic on a baking sheet; drizzle with olive oil and salt. Roast for 25–30 minutes.
  2. In a large pot, sauté chopped onion until translucent. Add roasted tomatoes and squeezed garlic, then stir in vegetable stock and seasonings.
  3. Blend until smooth using an immersion blender or regular blender.
  4. Return to low heat, stir in heavy cream, warm for 5 minutes, then adjust seasoning before serving.
