Creamy Potato & Dill Soup (‘Koperkowa’) is a heartwarming Polish classic that brings comfort with every spoonful.   • ½ medium onion (70g)
  • 2 medium carrots (140g)
  • 400g young potatoes
  • 1 tablespoon butter
  • 1 liter vegetable or meat-based stock
  • 200250g heavy cream (30% or 36% fat)
  • 100g fresh dill
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Peel and dice the onion, carrots, and potatoes; grate the carrot.
  2. In a pot over medium-low heat, melt butter and sauté the onion until translucent.
  3. Add diced potatoes and grated carrot; sauté for another 2-3 minutes.
  4. Pour in stock; bring to a boil, reduce heat, cover partially, and simmer for about 20 minutes until potatoes are tender.
  5. Blend a cup of hot soup with cream until smooth; return to pot.
  6. Stir in chopped dill, lemon juice, nutmeg, salt, and pepper; cook for an additional 3-4 minutes.
  7. Serve hot with optional garnishes.
