  • 200g salmon fillet, cut into chunks
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup broccoli florets
  • 1 cup cooked white rice
  • 1 cup heavy cream
  • 2 tbsp basil pesto
  • 1 garlic clove, minced
  • 1 tbsp grated Parmesan cheese (optional)

Instructions

  1. Cook the white rice according to package instructions and keep warm.
  2. Steam the broccoli florets for about 4-5 minutes until bright green and tender-crisp; set aside.
  3. Season the salmon with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear salmon for 2-3 minutes per side until lightly golden. Remove the salmon from the pan and set aside.
  4. In the same pan, sauté garlic until fragrant, then stir in cream, pesto, and Parmesan cheese if using. Simmer gently for 2 minutes until slightly thickened.
  5. Add the salmon and steamed broccoli to the sauce, tossing gently to coat everything evenly. Serve over warm rice.
