  • 4 tbsp unsalted butter (for chicken)
  • 6 tbsp unsalted butter (for sauce)
  • 1 lb rotini pasta
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 4 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup chopped fresh chives

Instructions

  1. In a medium bowl, season chicken cubes with Cajun seasoning, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook seasoned chicken until golden brown (6-8 minutes). Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant.
  4. Cook rotini according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  5. In a large pot or Dutch oven, melt remaining butter and sauté garlic. Add heavy cream and chicken broth; bring to simmer.
  6. Stir in Parmesan cheese, salt, pepper, garlic powder, and onion powder; simmer until thickened (5-7 minutes).
  7. Toss cooked rotini into the sauce; add reserved pasta water for desired consistency. Mix in cooked chicken.
