  • 1 large Onion (chopped)
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth (or vegetable broth)
  • 14.5 oz Diced Tomatoes (canned)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed)
  • 2 medium Potatoes (diced)
  • 1 tbsp Smoked Paprika
  • 1 cup Heavy Cream (or coconut milk)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. In a large pot over medium heat, add oil and sauté chopped onion until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  2. Add ground beef to the pot and cook until browned; drain excess fat if needed.
  3. Stir in diced tomatoes, corn, black beans, potatoes, smoked paprika, salt, pepper, and broth. Mix well.
