  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 tbsp brown sugar
  • 1 can (13.5 oz) full-fat coconut milk

Instructions

  1. Heat a large pot over medium heat. Optionally add oil. Sauté the chopped onion until translucent, then add minced garlic and grated ginger until fragrant.
  2. Add cubed beef to the pot and cook until browned on all sides (about 5–7 minutes), stirring occasionally.
  3. Stir in red curry paste, turmeric, paprika, coriander, and brown sugar until the beef is coated. Pour in coconut milk and bring to a simmer.
  4. Reduce heat to low, cover, and let simmer for about 45 minutes to an hour until beef is tender; stir occasionally.
  5. Serve over fluffy rice with crispy fries on the side.
