Ingredients

  • Orzo pasta
  • Fresh broccoli florets
  • Boneless chicken breast, cubed
  • Garlic (minced)
  • Onion (finely chopped)
  • Cream or half-and-half
  • Grated Parmesan cheese
  • Olive oil

  • Fresh parsley
  • Salt & black pepper

Instructions

  1. Cook the orzo pasta in a large pot of salted boiling water until al dente (8-10 minutes). In the last few minutes, add the broccoli florets to blanch. Drain and set aside.
  2. In a skillet over medium heat, drizzle olive oil, then sauté seasoned cubed chicken until golden brown and cooked through (about 6-7 minutes). Remove from heat.
  3. In the same skillet, melt butter and sauté onion and garlic until fragrant. Stir in cream (or half-and-half) and Parmesan cheese until smooth.
  4. Combine the cooked orzo and broccoli with the creamy sauce, then fold in the sautéed chicken.
