  • 2 chicken breasts, cut into bite-sized pieces
  • 4 cups cauliflower florets
  • 5 slices turkey bacon (or bacon alternative)
  • Olive oil
  • Salt and pepper

Instructions

  1. In a skillet over medium heat, add olive oil if needed. Cook chicken pieces until golden brown (about 5-7 minutes). Remove and set aside.
  2. In the same skillet, cook chopped turkey bacon until crispy (about 4-5 minutes). Remove and set aside.
  3. Boil water in a large pot; add cauliflower florets and cook until tender (about 8-10 minutes). Drain well.
  4. Blend cooked cauliflower in a blender or with an immersion blender until smooth, adding water or broth as needed for consistency.
  5. Return the blended sauce to the skillet over low heat, then stir in the cooked chicken and crispy bacon until heated through.
  6. Serve hot, garnished with herbs if desired.
