  • 1 medium onion, diced
  • 1 lb mushrooms, sliced (shiitake and cremini recommended)
  • 4 cloves garlic, minced
  • 2 Tbsp cornstarch
  • 3 cups vegetable broth
  • 1 lb baby potatoes, cubed
  • 2 cans (15 oz.) white beans, drained
  • 2 cups dairy-free milk
  • Fresh parsley, chopped

Instructions

  1. In a large pot or Dutch oven, melt the vegan butter over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in the sliced mushrooms along with thyme, rosemary, salt, and pepper. Cook for about 7–10 minutes until browned.
  3. Add minced garlic and cook for an additional minute. Sprinkle in cornstarch and stir to coat the vegetables.
  4. Pour in vegetable broth and add cubed baby potatoes; bring to a boil.
  5. Lower heat and simmer uncovered for 15–20 minutes until potatoes are tender.
  6. Stir in white beans and dairy-free milk; simmer for another 10–15 minutes until thickened.
  7. Adjust seasoning as necessary before serving warm, garnished with fresh parsley.
