  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup diced English cucumber
  • ½ cup finely diced red onions
  • 1/3 cup chopped fresh cilantro
  • ¾ cup fresh Cotija cheese
  • 3 tablespoons avocado oil
  • ¼ cup lime juice
  • 2 tablespoons red apple vinegar
  • 1 tablespoon honey
  • Spices: salt, black pepper, cumin, garlic powder, chili powder

Instructions

  1. Bring a large pot of salted water to a boil. Add corn and cook for 4 minutes. Drain and rinse under cold water until cooled.
  2. Cut kernels off the cob and place in a mixing bowl. Add remaining veggies and toss.
  3. In a separate container, shake together dressing ingredients and pour over the salad. Toss to combine.
  4. Serve immediately or chill for up to one day.
