  • 1.5 lbs beef chuck, cut into 1.5-inch cubes
  • Salt & freshly ground black pepper
  • 2 tbsp vegetable oil
  • 1 large yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red or yellow curry paste
  • 1 tsp ground turmeric
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • 1 tbsp brown sugar
  • Juice of lime
  • 1 cup jasmine rice
  • 4 garlic naan, warmed
  • Chopped cilantro or Thai basil, for garnish

Instructions

  1. Season beef cubes with salt and pepper. In a heavy-bottomed pot, heat vegetable oil over medium-high heat and sear the beef until browned on all sides, about 5-7 minutes. Remove from pot.
  2. In the same pot, sauté onion, garlic, and ginger until translucent. Stir in curry paste and turmeric; cook for another minute.
  3. Return beef to the pot and add coconut milk, broth (or water), brown sugar, and lime juice. Stir to combine.
  4. Bring to a simmer, cover, and reduce heat to low. Braise for about 1.5-2 hours until beef is tender.
  5. While the beef cooks, prepare jasmine rice according to package instructions.
  6. Serve hot beef curry over jasmine rice with warmed garlic naan on the side.
