  • 1 tbsp coconut oil
  • 1 large onion

  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Heat coconut oil in a large heavy-bottomed pot over medium-high heat. Add beef chunks and sear until browned on all sides.
  2. Remove the beef and set aside. In the same pot, sauté chopped onion until translucent, then add minced garlic and grated ginger; cook until fragrant.
  3. Stir in curry powder, turmeric, cumin, smoked paprika, and cayenne pepper (if using). Mix in tomato paste to build flavor.
  4. Pour in coconut milk and beef broth, stirring to combine. Return seared beef to the pot and bring to a gentle simmer.
  5. Cover the pot, reduce heat to low, and let it braise for about 2 hours or until the beef is tender.
