  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar with softened butter and cinnamon to create the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. Using a stand mixer, cream cold cubed butter and granulated sugar until smooth before adding eggs and vanilla.
  5. Gradually incorporate the dry mixture into the wet mixture until fully blended.
  6. Shape dough into a rectangle on a floured surface and spread the cinnamon filling evenly.
  7. Roll up the dough tightly and cut into 10–12 pieces.
  8. Bake for 9–11 minutes or until edges are golden brown.
  9. Cool on baking sheets for 10–15 minutes before transferring to a rack.
  10. For frosting: mix softened cream cheese and butter with powdered sugar, vanilla, and salt until smooth; frost cookies once cooled.
