  • 175g plain flour
  • 4 large eggs
  • 300ml full-fat milk
  • 6 rashers turkey bacon
  • 12 chipolata sausages
  • 2 onions
  • 200g sage and onion stuffing
  • 500ml chicken stock
  • Cranberry sauce (for serving)
  • 2 tsp Dijon mustard
  • 4 tbsp sunflower or vegetable oil
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 1 tsp chopped thyme leaves
  • 1 tbsp plain flour

Instructions

  1. Preheat your oven to 220°C (200°C fan).
  2. In a bowl, sift flour and create a well. Mix eggs and milk separately; pour into the well and whisk until smooth. Add Dijon mustard, season, and let rest.
  3. Wrap each sausage with half a turkey bacon rasher.
  4. Heat oil in a roasting tin; add wrapped sausages, onion wedges, and stuffing balls. Roast for 20 minutes until golden.
  5. For gravy, sauté sliced onions with butter and olive oil until tender; stir in flour, then gradually add chicken stock while stirring until thickened.
  6. Add Brussels sprouts and leeks to the roasting tin; roast for another 5 minutes.
  7. Pour batter around ingredients in the tin; bake for an additional 20–25 minutes until puffed and golden.
  8. Serve hot with onion gravy and cranberry sauce.
