  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gradually add dry ingredients to wet mixture until just combined. Fold in zucchini and 3/4 cup chocolate chips.
  5. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50–60 minutes or until a toothpick inserted comes out mostly clean.
  7. Let cool for 15 minutes in the pan before transferring to a wire rack to cool completely.
