  • 1 medium zucchini, sliced
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 3 garlic cloves, smashed
  • 1 teaspoon sesame oil
  • Cooking oil for frying
  • 1 teaspoon cornstarch
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar or honey, optional vinegar, and garlic. Let it sit for at least 30 minutes.
  2. Cook the chicken: Heat cooking oil in a wok over medium-high heat. Stir fry the marinated chicken and garlic for about 2 minutes until the chicken is no longer translucent. Remove from the pan.
  3. Stir fry zucchini: Add more oil if needed, then stir fry the sliced zucchini for about 5 minutes until tender.
  4. Combine: Return the cooked chicken to the pan, add oyster sauce, and stir everything together for another 2-3 minutes.
  5. Serve hot over rice or noodles as desired.
