  • 3 packages instant ramen noodles
  • 1 pound boneless skinless chicken breasts, diced
  • 1 cup red bell pepper, diced
  • 1 cup white button mushrooms, sliced
  • ½ cup sweet yellow onion, diced
  • 1 cup broccoli florets
  • 3 tablespoons vegetable oil, divided
  • Garlic and ginger for flavor
  • Soy sauce, hoisin sauce, oyster sauce, rice apple vinegar, sriracha

Instructions

  1. Whisk together the sauces in a small bowl and set aside.
  2. Boil water in a saucepan and cook the ramen noodles for 1-2 minutes. Drain and rinse with cold water.
  3. In a nonstick skillet, heat 1 tablespoon of oil over medium-high heat and cook the chicken until fully cooked (4-5 minutes). Set aside.
  4. Add remaining oil to the skillet and sauté bell peppers, mushrooms, onions, and broccoli until tender (about 5 minutes).
  5. Stir in garlic and ginger; then return the chicken to the skillet.
  6. Toss the cooked noodles with the chicken and vegetables in the prepared sauce until well coated.
