  • 6 Tbsp Unsalted Butter
  • 1 Cup Onion, chopped
  • 2 Carrots, chopped
  • 2 Celery sticks, chopped
  • 3 Garlic cloves, minced
  • 1/3 Cup Flour
  • 5 Cups Chicken Stock
  • 1 lb Yukon Gold potatoes, peeled and sliced
  • 4 Cups Cooked Chicken, shredded
  • 1 Cup Frozen Peas
  • 1 Cup Corn
  • 1/2 Cup Half and half cream
  • Fresh Parsley for garnish

Instructions

  1. In a Dutch oven, melt butter over medium heat. Sauté onions, carrots, celery for 4–5 minutes; add garlic and cook for another minute.
  2. Stir in flour; cook for 1–2 minutes.
  3. Gradually whisk in chicken stock; season with salt and pepper.
  4. Add potatoes; simmer until tender (10–12 minutes).
  5. Stir in peas and corn; return to simmer before adding half-and-half and shredded chicken.
  6. Heat through for another 10 minutes.
  7. Garnish with parsley before serving.
