  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 2 boneless skinless chicken breasts (butterflied and halved)
  • Salt and pepper
  • 1/3 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 oz cremini mushrooms (sliced)
  • 3 garlic cloves (minced)
  • Fresh thyme and oregano
  • 1/3 cup heavy cream
  • Fresh parsley (for garnish)

Instructions

  1. In a medium saucepan, bring marsala apple vinegar and chicken broth to a boil. Reduce heat and simmer until reduced to one cup, about 15 minutes.
  2. Season the chicken with salt and pepper, then dredge in flour.
  3. In a skillet, melt butter and olive oil over medium-high heat. Sear the chicken until cooked through, about 10–12 minutes total.
  4. Remove the chicken and keep warm. In the same skillet, sauté mushrooms until golden brown; add garlic towards the end.
  5. Pour in the marsala reduction along with thyme and oregano; simmer while scraping browned bits from the pan.
  6. Stir in cornstarch mixture until thickened, then add heavy cream. Return chicken to the pan and spoon sauce over it. Garnish with parsley before serving.
